This dish, with its crumbly cookie base and rich creamy filling, is the signature dessert at Syrahs. 

Ingredients

For the base 
4 cups cookie crumbs
¼ cup melted butter

For the cheesecake
1 ¼ lbs cream cheese at room temperature
¾ lb goat cheese at room temperature
1 ⅓ cups white sugar
¼  cup lemon juice

1 cup heavy cream, whipped
15 oz white chocolate, melted

Method

  1. Combine melted butter and cookie crumbs and press into a 9-inch springform pan
  2. Whip cream cheese, goat cheese, white sugar and lemon juice until combined
  3. Add heavy cream and white chocolate and combine
  4. Pour into prepared base and let chill overnight
