This dish, with its crumbly cookie base and rich creamy filling, is the signature dessert at Syrahs.
Ingredients
For the base
4 cups cookie crumbs
¼ cup melted butter
For the cheesecake
1 ¼ lbs cream cheese at room temperature
¾ lb goat cheese at room temperature
1 ⅓ cups white sugar
¼ cup lemon juice
1 cup heavy cream, whipped
15 oz white chocolate, melted
Method
- Combine melted butter and cookie crumbs and press into a 9-inch springform pan
- Whip cream cheese, goat cheese, white sugar and lemon juice until combined
- Add heavy cream and white chocolate and combine
- Pour into prepared base and let chill overnight
